I don't know about the water taxi, but as long as your son stays within the boundaries indicated by your host on the island, he should be fine.

We paid $90 USD for the dvd & 6 photos.  I think the dvd alone was $50.  Dolphin Discovery Grand Cayman has a website.  They may have the prices posted on there.  dolphindiscovery.com

I noticed that they have before & after deckplans available on the Carnival site.  You can always check that to see the changes that will be made.

There may be some info in the FAQ on the main carnival site.  We have always used a credit card on ours.
