I have done the sub-ocean boat excursion 2 times and it is fabulous!  You get to see all the sealife without having to dive or carry equipment with you.  It's more fun than snorkeling, although I do love snorkeling...  It's also an easy, fairly short trip that leaves you free to spend the rest of the day at the beach or ...

I went on my on to Xcaret and it is a fabulous place.  The only thing you'll need to watch out for is the time.  If you don't book through Carnival, I've heard they don't wait for you if you are late getting back.  If you're going from Cozumel, you'll need a ferry and taxi - Xcaret is on the mainland.  ...
