We had a great day playing golf just outside of Ensenada at a place called Baja Country Club.  It has a beautiful course set in a big Canyon with lots of lakes and great scenery.  We caught a cab there and back but you could probably more easily rent a car and drive out yourself - its about 20-30 minutes from the Cruise Ship ...
