There is really only one "dance club" it's called Beauties which is right outside of the main dinning room on deck 2.  There is a mixture of music played there as well as theme nights as well.  Check your carnival caper when your onboard.  

On the Lido Deck mid ship there are two pools which it appears that the front pool can be covered as I did see the retractable roof.  When we sailed on 4/18 out of Miami it was very windy and cold but they did not close the cover so I am not sure if they will when you sail but you will be going in January so it could happen :).  ...

It appears to be the same.  I was on the pride 4/18 out of Miami and the legends constest had the people you mentioned above and a few others I remember were Ricky Martin, Elvis, and James Brown
