My wife and I are heading to the Western Caribbean on 23 Aug 09 on the Legend and could use some suggestions for diving/snorkeling excursions.  I will have my advanced open water cert by the time we sail, but my wife does only snorkeling.  Are there any places (at any of the 4 ports - Grand Cayman, Cozumel, Belize and Roatan) where we can go and do both?

I recommend that you go to Cozumel Insider, it is a web site where you can book excursions and see what packages they have. Roatan would be a great place to dive, but Belize or Grand Cayman are great too.
