European currency exchanges

My husband and I are taking our first European cruise on the Splendor on Aug 30th to Northern europe. I have noticed that not every port uses the Euro and was wondering what is the easiest way to exchange money at the ports. (or should we do it on the ship)

Also wondering.........where is the best place to exchange US dollars for Euros? At the airport or the ship or any other suggestions would be appreciated by you experienced European travelers..............
